Kulcha is a type of Indian bread which is popular mostly in North India, but now it is famous all over the country. Kulcha is accompanied with curries, gravy, and dal recipes. It is mostly enjoyed with Chole Masala or Chickpeas Masala. Kulcha is served with chole as street food in North India. Kulcha are easily available in ready to eat packs in almost every grocery store. Ideally, the Kulcha is made by adding the yeast, but here I have given the recipe without yeast which tastes much better than what you get outside.
In the restaurant, kulcha's are prepared in tandoor and you get that smoky flavor. Whereas you can also make restaurant-style kulcha's at home on an iron tawa and that smoky flavor emerges when you roast the kulcha directly on gas flame by flipping tawa upside down. Butter is applied onto kulcha for the heavenly taste.Ingredients:
For dough:
2 Cup Maida
1 Cup Wheat Flour
2 tbsp Curd
2-3 tbsp Oil
Pinch baking powder
Salt
Water for kneading
For Rolling Kulcha:
Some plain flour/Maida to dust
Nigella Seeds (Kalonji)
Finely chopped fresh coriander leaves
Water
Method:
1) Take a mixing plate(paradh), sieve all dry ingredients, and add curd and oil to the mixture.
2) Add water and make a soft dough. Cover with a damp cloth and keep aside for 1.5 hours.
3) After 1.5 hours, knead the dough slightly and make the dough balls equal in size.
4) Take a rolling board, place the ball on it, dust some plain flour/maida to avoid sticking.
5) Sprinkle some finely chopped fresh coriander leaves and Nigella seeds on the balls.
6) Flatten it with the help of your hands in such a way that Coriander leaves and Nigella seeds stick to the balls.
7) Now with the rolling pin, roll the ball in oblong shape. Roll it neither too thick nor too thin.
8) Meanwhile, heat the iron tawa on high flame.
9) Now on the plain side of the kulcha, apply a good amount of water with your hands.
10) Once the tawa is nice and hot, flip the waterside kulcha facing tawa, so that it sticks to tawa.
11) Press the kulcha from sides, with your fingers. Once you see bubbles on the kulcha, turn your tawa upside down directly on the flame. The flame should be high.
12) You can now see you Kulch getting cooked directly on the flame. Once it's cooked evenly keep the tawa on the place and with the help of spatula scrape the sides and remove kulcha on a plate.
13) Grease it with ghee or butter or oil.
14) Serve hot.
