Vada pav is a famous street food in Mumbai. It is said that this dish was invented in Mumbai itself. It's the identity of Mumbai and a Mumbaikar cannot survive without eating Vadapav. It's not just food it's an emotion of every Mumbaikar.
Each and every corner of the streets in Mumbai has a Vadapav vendor. I believe the Vadapav vendor would never have faced the loss, as everyone is always ready to eat it. "Vadapav khane ke liye pet me nahi dil me jagah honi chahiye".
Not only Mumbaikar but people from every other state or country love the Vadapav of Mumbai. They enjoy the same as we enjoy it.
No burger, pizza could beat the taste of Mumbai Vadapav. Vadapav is a food that is enjoyed by each and every Mumbaikars. Vadapav is the pride of Mumbai.
It's very simple to prepare at home. Vada's are made of boiled potatoes, and few spices and are coated with the chickpea flour batter and then deep-fried in oil. It's served with pav and the green chutney, imli or tamarind chutney, and dry garlic chutney.
I have made this recipe with a twist. It's Garlic Vada Pav. I have prepared the garlic - red chili paste and coated the pav with this chutney and butter. It tastes the best. Vadapav is enjoyed a lot during monsoons.
The taste enhances of it is had with a cup of adrak/ginger tea or in Mumbaikar language "cutting chai".

2) Add crushed ginger, garlic and green chilies to oil. Now add turmeric powder and mix.
3) Add boiled potatoes and give it a nice mix. Add salt, finely chopped coriander leaves, and half lemon juice and mix.
4) Remove the mixture in a plate and let it cool.
5) To make the batter, take a bowl and mix all ingredients. Add water slowly to adjust the consistency as required and make a lump-free batter.
6) Once the potato mixture is cooled, divide into equal parts and shape them into the balls.
7) Heat oil in Kadai for frying.
8) Dip the balls or Vada's in the batter, coat it evenly and add into the oil for deep frying. Fry until golden brown on a medium to high flame. Remove the vada's on a tissue paper.
9) To make garlic chutney add the ingredients in the jar, add some water, and grind into the smooth paste. Garlic Chutney is ready.
10) Now take a non-stick tawa, add some butter, finely chopped onions, 2 tbsp of garlic chutney, few finely chopped coriander leaves and mix. Take a pav and slit it in between and place it on tawa and coat the pav in the chutney mixture evenly from all sides.
11) Take the garlic pav, place batata vada in middle and add sliced onion.
12) Garlic Vada pav is ready, serve hot.
