Digestive Biscuits

Digestive biscuits are the best tea time snack. It's made with Whole wheat flour from which we make regular roti or chapati at home. I tried making Homemade Digestive Biscuits and it turned out really well. These biscuits are little crispy and buttery at the same time. I have used all the ingredients available at home.

Only the tip for making these Digestive Biscuits is that you need to add the chilled butter and chilled milk to prepare the dough. It might be slightly sticky hence you need to dust lots of wheat flour while rolling it. Alternatively, you can also roll on a butter paper.
Prick the holes with a toothpick and interestingly you can also prick your name, initials, or any design you like. That's the advantage of baking your own digestive biscuits.


In this recipe/video, I have shown how to bake it using microwave and Kadai/cooker.
You need to be a little patient once the biscuits are baked. As they are so aromatic you will feel to binge on it immediately, but hold on for a few minutes, let it cool down completely and then you can enjoy it with your tea/coffee.


Ingredients:

250 gms Wheat flour
100 gms Powdered sugar
75 gms Chilled Butter
1/4 cup Chilled Milk
1 tsp Baking powder
1/4 tsp Salt

Method:

1) In a Mixing Plate, sift all the dry ingredients and mix. Now add chilled butter to the mixture and rub it nicely in the four so that it is mixed evenly. If your flour holds shape the butter is nicely mixed.
2) Now add the chilled milk little by little knead into a semi-soft dough. Refrigerate the dough for 10 minutes.
3) After 10 minutes knead the dough and divide it into 2 equal parts. One for baking in Microwave and other for baking in Kadai.
4) Make a smooth ball and start rolling the dough on a rolling board. Make sure to add enough amount of dry flour for dusting as the dough might stick while rolling.
5) Roll a little thick and give a round shape by using any lid or cookie cutter. Now prick the holes using a toothpick.
6) Grease a baking tray and dust some dry flour on all sides(Alternatively, you can also use butter paper). Place the biscuits on the tray.
7) Place the baking tray in the preheated microwave and bake for 17 minutes on 200 degrees.
8) Heat a Kadai on high flame for 5 minutes and place a wire rack in it.
8) Repeat steps 4 & 5 for the other part of the dough, place the biscuits on the other greased baking tray.
9) Place the baking tray in the Kadai and cover. Bake for 15-20 minutes or until the edges are golden,
10) Remove the biscuits from microwave and Kadai and let it cool for about an hour on a wire rack.
11) Biscuits are ready to be served with tea/coffee.
